Ingredients 1 tbsp coconut oil 1 tbsp honey 1 medium onion, chopped 1 tbsp minced garlic 1 cup cooked cooked rice 1 tbsp fresh spinach 1 tbsp cilantro, chopped 1 tsp dried oregano 1/4 tsp turmeric 1/8 tsp salt 1 tbsp fresh cilantro 1/4 cup spinach leaves, chopped1/2 tsp salt1 tbsp cumin seeds 1 bay leaf 1-2 tbsp vegetable oil 2 tbsp olive oil Directions Preheat oven to 180°C (350°F) and grease a baking tray with coconut oil.
Add onion and garlic and cook until soft.
Add rice, spinach, cilantro and salt.
Boil until the rice is soft.
Add turmeric, oreganos, cumin, salt and a splash of olive oil.
Pour the rice mixture into the tray and bake for 5 minutes.
Add spinach and cilantro.
Bake for another 5 minutes or until wilted.
Remove from the oven and set aside.
Heat oil in a large pan over medium heat.
Add onions and cook for 2-3 minutes until soft, adding more oil as necessary.
Stir in rice mixture, spinach and oreganol.
Cook for 1-2 minutes, stirring often to prevent sticking.
Serve warm or at room temperature.
